Recipe: Carrot and Coriander Soup

INGREDIENTS:
- 1 onion
- 1 clove of garlic
- 1 teaspoon of ginger powder
- 1 teaspoon of coriander powder
- 2 green chillies chopped up
- 1 teaspoon of salt
- 450g of carrots (three medium sized ones will be fine)- chopped up
- 3 medium sized potatoes- chopped up (add more if you like thick soup, less if you want watery soup)
- 1.2 litres of chicken or vegetable stock
- Handful of fresh coriander leaves
METHOD:
- Dice up the onion and fry in a tablespoon of olive oil
- Add in crushed garlic clove
- Add in chopped up green chillies
- Add in the chopped carrots and potatoes
- Pour in the chicken or vegetable stock.
- Cover your pot and let cook for 20-30 mins. Keep checking to make sure you don't burn the soup. You know your soup will be ready for the next step when the carrots have softened.
- When your soup has cooked through, turn off the hob and let cool for 10 mins.
- Pour your soup into a blender and puree your soup.
